Granola….yum

Well hello there readers,

I was thinking about the blog this morning and a potential rant I may go on about the never ending lecture to ‘go organic’ when I suddenly realised that there were in fact many follow-up posts outstanding. Cue a lot of knuckle *rapping with ruler at desk at work.

Sideline: I agree with organic food I just can’t easily source it and definitely cannot afford it. Rant rant rant.

So….be prepared to be bombarded this week with photos of Cercedilla, Norway and random recipes and to kick it all off let me show you my amazing, homemade granola……

Beautiful no? And so easy to make. Here is what you will need:

1 cup of oats
¼ cup of almonds
¼ cup of walnuts
¼ cup of pumpkin seeds (my fave)
¼ cup dried coconut
¼ cup olive oil
¼ cup dried apricots
½ cup honey

Basically, the method is the following:

Chop up all the nuts and apricots into tiny pieces. Chuck everything in a bowl. Use your hands to mix it all up. Spread it on grease-proof paper and bake in the oven at 180 degrees until it is golden brown.

Don’t forget to give it a bit of a mix every now and then. It should take about 20 minutes.

And that, dearest readers, is that. It is super delicious and lasts for a couple of weeks in an air-tight container.

*such a struggle to decide between wrapping and rapping. I mean wrapping is obviously wrong – for one, it isn’t anyone’s birthday and secondly, I would never give them my knuckles as a gift but rapping???? Yo yo, one two, one two….???

Deadlifts and dead shoulders

Ok….I have abandoned Crossfit a bit recently, mainly because I was on holiday and couldn’t afford to pay for a month. Sad but true. Plus I had my many injuries but I started back last week nice and slowly…..I am only doing twice a week because I don’t want to go mad and get another injury to add to my collection. And today we did deadlifts which are my favourite.

Every 30 seconds the clock beeped and I had to do ONE lift. They went like this:

40-60-70-75-80-85-90-100. Kilos of course.

When you couldn’t do it you had to run back to the 40kilo bar and do as many deadlifts in the remaining 30 seconds as possible. I got to 90 kilo but failed 100. Then I did 16 lifts in the remaining seconds. I am happy but also kind of gutted because I KNOW I could have lifted the 100 and I want to do it again!!!!! But, it will have to do for now.

As for the shoulders……about six weeks of no working out and the wall climbs and over head lunges practically had me crying.

So do I feel sorry for myself because it is so hard? Or do I think…I got fitter before so I can carry on and get fitter again now….? I am aiming for the latter but the former is quite appealing.

Give me some motivation people!

How do you cope with these things?

I need help. And not just to lift my t-shirt over my head.

Where?

Devon (that’s in the south of England in case you wondered). It is actually the furthest south I have ever been which is quite an embarrassing fact actually but it is what it is…….

I am here because it is my friend’s wedding tomorrow and it is actually really beautiful. I love a good wedding and I have a super cool jumpsuit for the event. I know you are now all imagining either a parachuting outfit or a Lycra onesie but I can assure you it is neither. It is red with palm trees on it – if there are any sober photos of me in it I will post a few.

So you’ll probably never see the jumpsuit. 🙂

I am doing all my posting in a higgelty piggelty way because I actually wanted to show you the truly awesome (in the original sense of the word) photos of preikestolen, which I climbed with my Mama and sister the other day but I seem to have got sidetracked so that will need to be a post for my return but here is a wee snippet……

What a Difference Half an Hour Makes……

I hope when you read that title you were singing the song that I had in my head when I wrote it. It would make me feel like we were all connected somehow….that and I have had a Norwegian Softis (Mr Whippy to us Brits) and the sugar in that plus this…….

Good Morning World!

Why am I so Cheerie today?

Just kidding. It isn’t really the coffee (although it is delicious). I am happy today because I am in Norway with my sis and my Mama. This is day three, it is Monday and I am not working! Yipppeeeeeeeee is kind of an understatement. Bad news is the amazing weather they have been having for the last few months has turned into this –

It is time for a holiday, oh yes, a long overdue holiday. Sometimes you just need to get away and see new surroundings (well…I have seen them before but you know what I mean). So I am off to Stavanger for a few days, then London, then to see an old friend in the south of England then to my friends wedding.

I love a good wedding.

As long as it’s not my own it is A OK. Unless it is to Roger Federer, that I would be completely fine with.
